blackberry cobbler

 

Thanks for your opinions about the header!  I just got on the computer and was shocked to see so many comments...very helpful indeed.

About the picture...yes, it's of Grace.  The two of us walked down to the stream the other day to check on a moth cocoon that we are waiting to see hatch.  Grace, in her bare feet, was going all over the place, not caring if she got wet.  She started going off in one direction and sunk clear up to her knees in black mud.  The noises she made and her cautions, "Don't come over here, Mom!  I DON'T recommend coming THIS way." made me laugh and laugh.  (And take a picture).

I thought I would share a recipe today.  I made it last week and Rich said it was his new favorite dessert.

I found this in the book linked to this post.  It's probably just a basic recipe you could find in any ol' cookbook, but here you go:

Blackberry Cobbler

Biscuit Topping:

1 1/2 cups all purpose flour
3/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
6 T. cold unsalted butter, cut in pieces
3/4 cup heavy cream

Blackberry Filling:

4 cups berries (fresh or frozen)
1/2 cup sugar
1 1/2 T all purpose flour
1/8 tsp. allspice

Preheat oven 375.

Make the biscuit topping.  In a large bowl, toss together the flour, sugar, baking powder, and salt.  Using your fingers, rub the butter into the flour mixture until the mixture resembles coarse crumbs.

Add the cream to the crumbs, tossing with a fork until a soft batter forms.  Set the topping aside.

Make the blackberry filling.  In a large bowl, toss together the blackberries, sugar, flour, and allspice.  Spoon the filling into an ungreased 13 by 9 inch baking pan.  Using a large spoon, drop mounds of the biscuit topping on the blackberry filling.  (The batter will spread as it cooks).

Bake the cobbler for 45 minutes, or until the topping is golden brown and the filling is bubbling.  Let the cobbler cool slightly on a wire rack before serving.  Serve warm or at room temperature.  Serves SIX

My own personal tweaks to the recipe:

used regular butter instead of unsalted
used 1/2 cup sugar instead of 3/4 cup
used half and half instead of heavy cream

used 5 cups of mixed berries instead of 4 cups of blackberries
used cinnamon instead of all spice
(also, next time I make it, I will try adding honey to the filling instead of sugar)

 

I know I could make my life a whole lot easier if I skimped on homemade things like desserts, breads, and nice dinners.  However, I really really enjoy baking and cooking, even though it can be hard to make *for example* homemade dinner rolls (like I did yesterday evening) when it's "that" time of the day (everyone is getting tired and grouchy, and mom can't wait for dad to come home!).  But, I'll tell ya, Rich was one happy man when he was eating those warm from the oven rolls last night...the children were happy, too....the noises of delight, "hmmm! hmmmm!" made me smile.  It's totally worth the trouble!  And Rich gave me a nice kiss right at the table, he was so pleased.  Food isn't the only way to a man's heart () but yes, for most men, it is a big step toward those lovin' feelings when his stomach is satisfied after a long day of working away from home.

I don't like cleaning the kitchen after dinner but the children are old enough to do it now.  What a blessing!

Speaking of food.  I made an odd lunch for the children yesterday but they loved it.  It was a pound of hamburger fried up in a pan, with one big can of baked beans mixed in, and some leftover corn from the fridge.  I didn't even add anything else...but, like I said, they enjoyed it, and it was healthy so there you go.  Jacob got out rolls and had his mixture on a bun.  They were impressed, and said they would add it to their menu.  (They say they will own their own restaurant someday which is a favorite ongoing topic of discussion).

I've been making the children all eat breakfast and lunch together around the table again.  We were starting to "just make yourself something to eat when you're ready" but then I realized I did not know what they were eating and I didn't think it was healthy enough.  I think it's better and easier for us all to eat together, it makes for some fun family times and the work of the meals is all at once, instead of scattered over an hour or more.  The children start off on the strangest topics and we all get to laughing.  Although, I must admit, there are times when I put a ban on talking.  Sometimes I really need the quiet. 

It's been rainy here the last few days.  Yesterday I was so drowsy that we watched a movie after lunch.  The children had listened to Hans Brinker on my IPOD (*Unabridged version*. I've been buying books for my ipod lately and they love to listen...Bambi, Where the Red Fern Grows, and Redwall) and then I had ordered the movie off of Netflix.  It is an old Disney movie and it was good!  Everyone liked it except Caleb (it was a little over his head).  They all wanted to go ice skating afterwards, but they satisfied their urges by "skating" with socks on the bare floors instead.

My little lamby just woke up (baaaaa-ing like a lamb to call me) and he's soaked so off I go.

Did you see the new Southern Living Magazine this month? They featured someone whose been collecting fiestaware. Reminded me of a certain little farm girl I know....... :)

I miss having a family at home to cook and bake for. Hubby and I usually keep it simple, and we don't need wonderful rolls and desserts, because they only seem to add to our middles! I do bake on cell group nights when I have 12-18 young people (ages 18-25) showing up in our apartment. They enjoy it, and I love to do it. They even brag to other cell groups that we have the best snacks! LOL! The cobbler recipe sounds really good! I will have to see if I can find some good prices on berries. I knew those had to be Grace's legs, since the pants were pink!

Your dessert looks wonderful.  I have that cookbook, and we make things from there all the time.  It has a lot of good recipes.  I haven't tried that cobbler recipe though, I use a different one.  Maybe I'll make this one, thanks for sharing this morning, I always love visiting your cozy site!

@purpleamethyst76 - The article is in the HOME section of the mag and the article is called A HOUSE FULL OF MEMORIES. It's the story of BJ FREEMAN and her NC home "where everything has a story to tell". She has an old farmhouse with a rustic display case full of every color of fiesta (looks like your collection!) this is what it ways under the picture of her fiesta collection-  "My Fiesta ware collection began when I was a baby. We lived in West Virginia near the plant where it is made." Be recalls. "My dad brough home a few pieces soon after I was born, and the collection grew from there."


The fiestaware is in in her kitchen and she painted the dining room the bright green of a few of her peices and it really makes the collection POP because it pulls the eye to the fiestaware which is in colorful contrast to the rough and rustic cupboard their in. :)


Also- the magazine cover is featuring "FAST & FRESH" Taste summer with 15 of the best peach and blackerry dishes. :) Seems like a certain someone would enjoy Southern Living. :)

The recipe looks so yummy!  We were just picking some blackberries yesterday afternoon, I'll have to make this cobbler.  It's funny, our blackberries are not quite ready but my friend has some in her yard that we picked yesterday.

Hey, I noticed spazzymommy's comment on the way down and had to comment on the Southern Living article too! Southern Living is like a taste of home for me, so Terry promptly bought me a subscription when we moved here. I soak up every page! Anyway, I also thought of you when I saw the article with the fiesta collection. It really did pop against the dark wood backdrop of the rustic kitchen, and I knew you would love it!

So many of your posts bring back pleasant childhood memories for me, and this was no exception. The "muddy feet" header, the cobbler, and the comments about your children cleaning the kitchen together and talking about random things such as having their own restaurant one day. Even the "skating" after watching Hans Brinker reminded me of times when my siblings and I watched movies and afterward were inspired to play or mimick something in the movie. Shanda, you make such a wonderful home life for your family, and I know you are helping to create a rich treasure-store of memories for your children some day!

I totally agree with you about the importance of home cooking. Good meals are about SO much more than supplying fuel for the body to live (although nutrition - and economy - are significant benefits, as convenience foods usually are less healthy and more expensive)! Good food and mealtimes together seem to foster such a sense of family unity and balance in life. Last Sunday I asked a teenage boy in our church, "How did your mom turn out such good kids?" He answered (without hesitation!), "Always eat meals together, and without the tv on!" I thought that was excellent, don't you?!

Your pictures are wonderful! What a thoughtful young lady! I so much remember my mothers home-cooking. Nothing like it. I treasure those memories so very much --it may not be the easiest way but that extra effort to bring forth something special was not wasted-- it was priceless to my little soul.

Your description of Grace telling you NOT to come that way made me smile...so funny. The cobbler looks so yummy. We picked blackberries off the bush in the garden the other day. There are not enough to make anything, but they were warm and plump and yummy. I agree with the meals thing, it is so satisfying to hear the ummmm, yums and have fun conversations! Very unusual we have had some light rains here. May be an El Nino year with water from the Pacific being pulled in. I have to go make David some cream of wheat...he doesn't feel good (sniffles) but is hungry!

I agree. There is something special about home cooked meals and sitting down to eat it together.  Cooking wasn't/isn't my favorite thing to do but the older our boys become I am finding fulfillment in putting food on the table that is healthy and the comment's @ the end of the meal of  "thanks mom, that was good"  make it so worthwhile.

I was glad to see your recipe for a fuller cobbler crust. In Oklahoma, they simply put a pie crust over the fruit and I don't care for it as much as the cake-like topping. I would have tweaked my recipe about the same way you did.

I know what you mean about making baked goods (especially bread, rolls or biscuits) for a large family. It seems like it takes so long to pull everything together and then it's gone in an instant!

I kind of keep us all together for breakfast, but do FOR SURE at lunch time. I like the camaraderie eating together brings.

Thanks for the recipe.  I am always looking for different dessert recipes.  The supermarket actually had fresh berries (all kinds) dirt cheap this week so I stocked up on them, I may have to try this recipe one night this week!

Ooh that looks so yummy!  I would love to make lot's of yummy home made things if I stayed at home.  I try to squeeze things in like that but it takes a lot of planning and I just don't have the time to sit down and plan ahead.  It's a treat when I make something all homemade though.  I hope that having breakfast and lunch together bring positive changes to your family and the brings more freedom to your day!  Love you, Lish
